Reduced Gluten Diet

So I am trying to eat healthier. I really thought that I was using my mindset to help me with both eating right and quitting smoking.... but I saw online somewhere (you know I can't find the article I read to give a link here) that they find if you eat more fruits and vegetables quitting is easier! Wow I thought I was just telling myself that to keep me on track..

 I had a problem after quitting that was so uncomfortable. I was bloated like there was NO tomorrow, in the morning it was better. Well most of the time. I have a few co-workers and a friend that has celiac disease. She teased me that she was reading in a magazine that more "old folks like us" are being diagnosed with celiac disease. That maybe I should try going gluten free. Of course one friend who was trying a carb restrictive diet suggested I go carb free. Then seeing a bunch of reports online and TV saying do we really need to eat gluten?  I thought maybe the universe is trying to tell me something!    Well the fact I am a poor single woman with pasta and other carbs that are gluten rich in my cupboard; I decided to cut the amount. I was getting a piece of toast for breakfast, a sandwich for lunch and dinner... maybe carb overload for my new improved metabolism. Not sure if it is true but I read somewhere in the materials I got from the quit smoking hot line that my metabolism was going to slow down due to the fact nicotine speeds it up. Ok I guess I have to deal.  But thought I was only gaining a little weigh not going to be painfully bloated.   I was going threw some painful bloating so I had to do something. I have to admit I did smoke a cigarette to "cure it". I felt horrible and said I have to figure this out. Cause I don't want to go back and have to wear the patches again.  Did I tell you that I got rashes really bad from them.  AND didn't sleep for over  3 months going thru withdraw....


So I have cut my wheat and gluten intake to my evening meal.  I eat oats or eggs for breakfast no more just a quick piece of buttered toast. I eat veggies and salads for lunch. Plus fruits and they make great snacks too.  And then I eat my dinner.  I have cut down the amount of pasta and up the amount of veggies.   Just like they say to do with beef products... Which I am craving some beef stew.... with some carrots, onions, green beans and potatoes.  Guess that isn't the worst thing to crave. Right? I eat beef a few times a month.  If that!

 I have learned a few things.  I like eggs without toast. Pouched eggs are good too.  I found a recipe for bolognese sauce. So I just skimmed it and thought wow vegetables in spaghetti sauce.  So I add some carrots and celery to my spaghetti sauce recipe and you can't even tell they are in there.  LOL PS I always have added onions to my sauce.  Oh and no meat.  One of those things I don't like meat with cause it was easier to cook one big pot of spaghetti sauce then two with the vegetarian daughters around.

Downside is I can't make a great pot of veggie soup!!!  I have tried tons of recipes and they tasted bad. I don't know what I am doing wrong...  I don't want to get a can and open it.  I want to make it.  Oh I can make some good soup with the beef stock but not a pure vegetable soup.  Maybe I will try a chicken stock veggie soup.  But I really want to make soup the girls can eat..... grrrrr

So I am happy to report no smoking and eating healthier.  Plus sleep very well thank-you.  Really got worried for awhile about that one.  Not bloated to the point of pain at night.  Guess I found my style of eating.

Dancing the Night or Day away..

             Who needs a fancy machine that helps you lose weigh? Sign up or start  the 100 days of dance .  It was the brain child of Kirstie Alley, you know the woman that lost weigh doing dancing with the stars.  Now I don't watch that show but we all have seen the transformation.  She lost 100 pounds! Granted she did take a herbal supplement. Just for the keeping in shape part, this would be a fun way to stay fit.




I think the key is to just keep active.  I feeling a little boated and trying to keep my metabolism on a even level. I know I will gain some weight after quitting smoking. But I don't want to use that as a excuse to gain too much.  I do feel better but I need to keep it up.  I find that eating healthy helps.  Eating my first in a long time fast food hamburger last night was horrible!  So healthy food for my healthier lifestyle....

Time for Cards

Oh this holiday season you can remember our soldiers. There is a outdated message circling the net that says When filling out your Christmas cards this year, take one card and send it to this address: A Recovering American Soldier c/o Walter Reed Army Medical Center 6900 Georgia Avenue, NW Washington, DC 20307-5001. If we pass this on and everyone sends one card, think of how many cards these wonderful, special people, who have sacrificed so much would get.

But the Walter Reed Army Medical Center has closed! So this would just end up in the dead letter office at the post office in Washington DC. If they are still open.  With our  local distribution  center closing it's postal operations here... you never know.  My daughter's father and his wife work there and may loose their jobs.  With worries my daughter.  Her father is talking of moving to West Virginia and that means to see her dad she have to make a 6 1/2 hour drive to see him.

Shine on Yahoo has a slide show that debunks the Healthy Drinks claims! The blog post I entitled Local heros was right in the money! Don't you love it when you use your common sense and  the you see what you said (thought was right all along!! LOL
Yea I am purring out my chest braggin about myself.....
There are a couple things that are not local that are proven good for you but so is many of the local fruits we have!

Discovery and Oil Rigs...

Sorry but my hours have picked up can you tell??? So to draw me out of hiding the news goes crazy... I see. First we have the Gulf Oil Rig explode then we have some guy making news by taking  people hostage  to make them show more green shows.... Sigh..... Violence isn't the answer. Not to mention the whole 9/11 mosque and the attack of the cabby.

Wow another explosion in the Gulf. The platform, known as Vermilion Oil Platform 380A  exploded and luckily the 13 people there was picked up from the water with only one person hurt. They didn't release how bad this person was or any names. But it is burning.... one more thing for the people of Louisiana.  With most of the news show showing Louisiana after Katrina.... Oh yea really what does the American people think that the president could do that would make the gulf oil spill better??? Gessh I think I need to stay off line for awhile... I keep reading how he should have done more... he went to Louisiana faster then the last president-and told BP humm no you need to pay for this your own damn self......... Cutting corners cost you BIG time didn't BP. We need to get BP to do more not the president...

So some guy: who thinks that the Discovery channel  should take off shows like Kate plus 8 and put on a show about gorilla that talks to a 12 year old girl (kinda cool..),  James J. Lee took three office workers hostage having bombs that he treated to drop. The station did know about his guy. He has a website entitled My Demands. A very interesting read but more like a look into madness.  He tells the station that the Kate plus 8 and 19 and counting shows are  encouraging the birth of more  parasitic human infants. AND the station needs to add more show that would encourage human sterilization and infertility. Right!  So just tell people to deny the most basic human desire and biological urge to help the environment.That their show "Planet Green" was more about making money not real solutions.. humm welcome to the US. Someone had to help pay for the show and well it does get kinda irritating that it does seems like one big commercial that many shows turn into. Well  rest in peace James J. Lee. I hope you found your peace.

The whole mosque wanting to be build blocks from ground zero had me saying please, there is one closer than that already built.  Are we going to make them tear it down? But that we need to get along with all religions  cause that is what this country was built on right? Can we say First Amendment? Then I see that  developer Sharif el-Gamal is the past has been in trouble with the law. Things like being with a hooker doesn't bother me but rouging up someone you rent too does. Violence isn't the answer. But then some drunk stabs a cab driver after asking if he was Muslim.
Violence isn't the answer!!!! AND I can't find now... I really wanted to find the site where I read this and really wanted to post the site... But some Muslim  leader basically said that American need to just get over it... I thought WTF? Get over it? AND that the mosque at ground zero has done so much for the al-Qaeda and that many Muslim are running to join. Because of the racial hatred in this country. I thought WTH was this their plan... but Violence isn't the answer. Yea I really am a hippy... But just like most Christians, Jews, Islamic, Mormons, Pagans, or Muslims  we have some good guys and some bad guys....They all  aren't the  al-Qaeda, . They just want to worship peacefully and like I said there is a mosque closer they just want to make a Islamic center.....

The Give Love Foundation

The Give Love Foundation is something that I heard about from the wonderful actress Patricia Arquette.The Give Love Foundation is working  with displaced communities and Haitian partners to build container housing. They are using the shipping containers that the supplies are shipped over to Haiti

 Buy this beautiful necklace and all the processes go to the efforts of  Give Love Foundation. I should have had more than 2 girls... LOL I like that necklace but my finances right now are shaky.

Have you seen shipping  container housing?  It not like what you think. It can used to make some very different or very conventional. See many different prefab or container houses here. But the coolest one I saw on Planet Green . I forget the name of the show, sorry. But the house was a prefab house, that can easily be containers, and they over lapped that right in the middle of was a open area with a tree growing there. And outdoor living spaces even on the second floor. Like balconies off the bedrooms, dinning rooms, and living room...

Shipping containers have wooden floors, instillation, and are very waterproof. Windows can be added and modern appliances.  They first their green make-over as storage sheds.There are roughly 17 million  not in use!  But many architects and building designers saw a easy way to build house for less money while reusing materials. There seams to be a architect in many areas, from the West Coast to Japan.

I love the idea of the cabin. Think that could help many areas with a camping area for the girl  and boy scouts camps. Or even quick housing for places like Haiti. Where they need shelter fast.  Second homes in warm climates..... I could go on and on......

The average size is eight feet tall, eight feet wide and either 20 or 40 feet long but many times there number of containers placed together. Los Suns

So today is Cinco De Mayo! So yea most of Mexico doesn't celebrate this holiday but we Americans like too. the sales of pinatas, tequila and Mexican food go up.

But after Arizona's controversial new immigration law has many people protesting, the Phoenix Suns a NBA team will be wearing jerseys that will say Los Suns. "to honor [the] Latino community and the diversity of our league, the state of Arizona, and our nation." Yes.... While many think that a basketball team should stay out of politics, they went ahead and said what they believed in.... Robert Sarver asked the team and got unanimous support from his players.


AND they were not the only ones that would have different jerseys tonight. Spurs coach Gregg Popovich treid to get "Los Spurs" jerseys. But it was to late to order and have them by tonight!

Going for the Gold!

Who is watching the 2010 Olympic Winter Games in Vancouver? I get to see some of the games at work. Really sorry to say but I am not really that interested in sports.

But finding out that the Olympic medals are made with recycled electronics parts that does interest me....  Teck Resources is a metal company right there in  Vancouver that is supplying the medals that the athletics have been dreaming about maybe all their lives!!   Teck's President and CEO Don Lindsay comments, "We're also excited that these medals will contain recycled metal recovered from end-of-life electronics, consistent with the sustainability philosophy of the Olympic and Paralympic Games."

Granted it isn't 100% recycled but a small part: gold: 1.52 percent; silver: 0.122 percent; and copper: 1.11 percent. Anything recycled is better then not recycled.  Every little bit helps! Kept many items out of the land fill and poisoning our environment.  That equaled  6.8 metric tonnes of electronics circuit boards for the 1,000 medals made.  Not bad! 

Gee we need a environment group to give a gold metal to the  Teck Resources metal company for being the first for finding a way to make the 2010 Olympic games green!!

Plus it goes to show everyone that the 1.52% didn't seem like much but the amount that was saved from the landfill is a big savings.  Plus if you think about it when we do what we can it will make a big difference.

You are Beautiful.

National Eating Disorder Awareness Week is February 21 to February 27.  When the Dove commercials first came out I cried at the beautiful little girls with the sad "thoughts".  Little girls who didn't know they where beautiful.  When working with children and dealing with people I knew that had this disorder I learned some very scary things.  Things that made me think, that told me I  need to change the way I thought.  End the fat talk the negative self talk.  That 58% of men and women think they would look more beautiful if they lost weight.  The youngest person on record with a eating disorder was 5. Five years old.  She saw mommy purging. So when she decided she was too fat; she began to purge.  Little girls wanting to go on diets.  Grown women that would give up years off their live to be or stay thin....  Makes me wanna cry.

Tonight I found  Operation Beautiful It's basically a grassroots campaign that leave positive messages in public places for other women to find. Using sticky notes.



Simple beautiful way for us to support each other. Because beauty is in the fact we don't all look the same. Beauty is our difference. Our humanity.

YOU Are SO Beautiful......... Show the world your beauty.
